the thrill of blueberry {hill} muffins

Ever since I have discovered home made muffin recipes, I never buy the mix anymore. In fact, the recipe is just as easy as a mix! I'm serious. All it takes is a few basic pantry items. (And, in this case...blueberries!)
First, you mix your dry ingredients...

Then you whisk your wet ingredients...
You mix the two together and add a fruit of your choice... we chose these little lovelies:
Easy-peasey so far, right?
Bonus: They make the house smell fantastic!
And then, here comes the hardest part... deciding how many to eat!
Your kids will love you even more than they already do.
Promise!

Blueberry Muffins

1 3/4 C flour
1/3 C sugar
2 t baking powder
1/4 t salt
1 beaten egg
3/4 C milk
1/4 C cooking oil

3/4 to 1 1/2 C blueberries

In a medium mixing bowl, combine dry ingredients and mix well.

In another mixing bowl, combine wet ingredients and mix.

Add wet to dry and mix well.

Fold in blueberries.

Spoon better into prepared muffin cups. Bake at 400 for 20 minutes, or until tops are lightly golden. Cool and enjoy!

homemade muffins are the best! i always top mine with a little homemade streusel topping-flour/sugar/cinammon/butter cut into little chunks. makes it extra sweet and adds a lil crunch to the top! ok, and it makes it less healthy. . .but thats the way i like it:) great pics as always emily!
